Do you ever get bored eating the same ole tired food, day in and day out? One of my go-to people to consult is my BFF Lindsey. Company chicken is one of her husband’s favorite recipes so I wanted to give it a try.
I’m not sure why it’s called “company chicken”, but I suppose it’s a type of meal you can make for guests. Whether or not you have company, if you love hollandaise sauce and artichokes you should definitely try this one out!
The Basics

4 skinless, boneless chicken breasts

salt and pepper

parsley (optional) – cleaned and chopped

2 cans of quartered artichoke hearts – drained, with tougher leaves removed

Cooked white rice
The Rundown

Pre-heat oven to 325 degrees.

Season chicken with salt and pepper.

Put artichokes in an oven-safe dish, then add chicken on top.
- Bake chicken until cooked. It’ll take about 20 minutes.

Meanwhile, prepare hollandaise sauce.

Remove chicken from oven.

Place chicken and artichokes on a bed of rice and drizzle hollandaise sauce. Enjoy!
