I know it’s been a VERY long time since I’ve posted, but my life has gotten very, very busy!  So far this year, I’ve been juggling my job, a new puppy (her name is Honey), planning and preparing for my brother’s wedding and I’m working on a new website called JotandGot.  Always on my grind!  Turkey ala king is one of my favorite comfort foods.  My mom usually makes it after Thanksgiving with the leftover turkey, so it always reminds me of the holidays.  But you don’t have to wait until the holidays to make this hearty dish!  I had leftover turkey legs.

emerils_chicken_marsala

I was completely amazed on how delicious and easy Emeril’s chicken marsala recipe was.  The chicken was cooked perfectly and the mushroom sauce melted flavor and was a creamy dream.

I made a few alterations and it turned out just as well.

  • I used beef broth because that’s what I had on hand.

turkey_spinach_lasagna

This is a different twist on a very classic dish.  I wish I could say I planned it, but I came up with it with ingredients I had on hand.

The garlic and herb spread is definitely the star of this.  The spinach makes a colorful appearance, but doesn’t leave a strong taste — which is great if you have vegetable-resistant eaters!
